Sodium hydrogen carbonate (NaHCO3) is a sodium salt of carbonic acid and is one of the hydrogen carbonates. The compound must not be confused with sodium carbonate (soda, empirical formula Na2CO3). The product with the E number 500, also known as baking soda, is used in foods as a raising agent and in effervescent powders. There is a mixture of baking soda with a solid acid like citric acid. But it also occurs in bath tablets and fire extinguishing powders. It is also used to soften water. Sodium hydrogen carbonate can also be found under the names Speisesoda, Baking Soda, Food Soda and the brand names Bullrich-Salz and Kaiser Natron. Sodium hydrogen carbonate is a colorless, crystalline solid that decomposes above a temperature of 50 ° C with elimination of water and carbon dioxide to form sodium carbonate.
